Grilled Swordfish with Chef Josef's Seasoning Blends

6 oz of Swordfish per person

1 Tbsp olive oil

1/4 tsp Seasoning Blend (any)

2 shakes of Worcestershire sauce

 

Marinate fish with spice blend and olive oil for 10-20 min.

Place it on the grill of a 450˚preheated BBQ.

Mark on both sides, 2 minutes each side.

Turn BBQ to low heat for 4 minutes at 375.˚

Fish will be cooked to medium doneness, (140˚ with meat thermometer)

If you like it less cooked, medium rare (120˚), leave on only for a couple minutes. Try it, it's the best way to eat Swordfish.

Meal suggestion: Serve with grilled asparagus and Basmati rice. You can grill the lemon, too!

Grilled Pork Tenderloin with Chef Josef's Original Blend

Serves 4 people

1 ½ lb pork tenderloin

1 tsp Chef Josef’s Original Seasoning Blend

2 Tbsp olive oil

1 tsps. Worchester sauce

2 Fresh sprigs of rosemary or thyme

Marinade Pork for 20 minutes in spices and olive oil

Preheat BBQ to 450˚

 

Place pork on BBQ grill.

Mark on all sides with the lid closed for 3 min each side.

Reduce heat to 375˚

Finish cooking to your liking.

 

For those of you who like to use a Meat thermometer, here are some readings:

125˚ medium rare

140˚ medium

160˚ well done, still slightly pink

Serving suggestion: You can grill cauliflower and sweet potatoes, too! Just add olive oil and your favorite seasoning blend.

Salmon with Ginger and Fennel

for 2 people

Ingredients:

16 oz Salmon

1/2 shaved Fennel  

1/4 chopped Leek

1/4 chopped Onion  

1/4 cup White wine

2 splashes Worcestershire sauce

1 tsp chopped Fresh Ginger   

1/2 tsp Chef Josef's Curry Basil Blend

 

Preheat oven to 425˚

Place Salmon in cast iron pan

Place all other ingredients on top

Braise in oven for 10 min.

Salmon should only be 3/4 cooked

Let rest for 2 to 5 minutes and serve

The Chef Josef's Lemon Dill would also be great with this recipe.

 

Traditional and Not So Traditional BBQ Recipes with Chef Josef’s Seasoning Blends

Grilled Chicken

1lb. Chicken thighs

2 Tsp. Olive oil

½ tsp. Chef Josef’s Lemon Dill or Chef Josef’s Curry Basil Blend

½  Squeezed lemon

2 tsp. soy sauce  (optimal)

Marinate for at least ½ hour

 

Bring BBQ to 475˚ (or oven)

Place on Grill cover

Turn Meat every 2 minutes until a light brown crust is formed.

Reduce temperature to 375˚, finish cooking until chicken's temperature is at 160˚ (about 15 min.)

Let sit for 5 Min.
 

Grilled or Broiled NY Steak or Lamb Chops

Serves 2 people

2 portions of meat

3 Tbsp olive oil

½ tsp. Chef Josef’s BBQ Seasoning Blend (For milder flavor Chef Josef’s Original blend

1 tsp. Worcestershire sauce

*Marinate for at least a ½ hour before cooking

 

Preheat grill, broiler or cast iron pan to a high temp 475˚

Place meat on surface for 3 to 4 minutes, until a dark crust appears.

Turn temp to 375˚ grilling to your desired doneness.

120˚ = rare

140˚ = med rare

150˚= med

160˚ = well done

 

Salmon, Swordfish, Prawns or Scallops

6 oz. of Fish per person

2 tsp. Chef Josef's Seasoning Blend (Any one would work; my favorite is Lemon Dill)

1 Tbsp. olive oil

½ tsp. lemon juice

1 tsp. Worcestershire Sauce (optional)

Marinade for 15 to 30 Min.

Preheat heating service to 450˚

Place fish on surface for 3 to 4 minutes on both sides to get a marking

Reduce heat to 375˚,  finish cooking another 3 to Min.

 

I like my seafood medium rare. This way the fish stays nice and moist. Try it, you will like it.


 

Grilled Vegetables with Chef Josef’s Seasonings

Any vegetable

Season with any blend (My favorite is Lemon Dill)

Drizzle Olive oil and a splash of Soy sauce and lemon juice (optimal)

Marinade for 30 Minutes

Place on hot Grill 475˚ for the first 5 to 7 Min. reduce heat to 375˚, finish grilling

 

Chef Josef’s Cooking Tip

If you grill any type of meat or vegetable for a party:

Grill your Meat, Vegetable or Fish in advance

Grill vegies on the high temperature until you’ve got your grill markings

Remove from grill and place in pre-heated oven at 375˚ 20 to 30 min before serving.

This way you will avoid over cooking and you have time to spend with your friends.  


 

 

Not My Grandma’s Turkey Meatloaf

Ingredients

1 lb. ground turkey meat

2 Eggs

½ cup of Panko breadcrumbs

1 cup chopped leeks

1 cup gourmet mushrooms

2 cups sliced fingerling potatoes

¾ tsp. Chef Josef’s BBQ blend

1 tsp. olive oil

 

Instructions

Mix meat, eggs, leeks, Panko, mushrooms and BBQ Blend in large bowl

Place in greased baking pan

Put potatoes on top add olive oil

Bake at 425 degrees in the middle of the oven for 35 to 45 min. Let sit for 5 minutes and serve.  

Pan Seared Prawns or Scallops

Serves 2 people

Ingredients

½ lb. pealed large prawns or scallops 

2 cups of sugar snaps 

½ cup chopped green onion 

1 tsp. chopped ginger 

1 tsp. olive or sesami seed oil

½ lemon juice 

½ tsp Chef Josef Curry Basil or Lemon Dill Blend 

 

Instructions

Glaze onions in oil 

Add all other ingredients 

Simmer covered on high heat until shrimp or scallops are half done, let sit for 5 min

Serve over brown rice 

 

Clams Casino

Ingredients

24 Clams

Eggs

Bell Pepper (any or all colors)

Bacon (1/2 cooked, still limp)

Bread crumbs

Parsley

1 tsp Chef Josef's Lemon Dill, Curry Basil, or BBQ Blend 

 

Instructions

Use a towel to hold clams while you open them. Pry open with a tool at the back part and twist open. Do not use if shellfish is open already.

Sauté bacon bits until limp, then set aside. 

Sauté 2 Tbsp. onion w/butter or olive oil, 4 Tbsp. parsley, 1 Cup bell peppers; add ½ Cup of white wine; spices ½ tsp. each.

Add vegetables to 2 cups of breadcrumbs, add egg and mix. 

Cool off mixture and put into open clamshells. Put ½ cooked bacon on top.

Broil for 4-5 minutes till the bacon is crisp.

Fresh Spinach

2 portions

Ingredients

1 bunch of fresh spinach washed (cut spinach bunch by the band and soak in water for 5 minutes)

1/4 chopped onion 

1 tbs. Olive oil 

½ tsp. Worchester 

1/4tsp. Chef Josef’s Curry Basil or Lemon Dill Blend 

 

Instructions

Glaze onion in olive 

Add all other ingredients and cover, simmer until spinach is wilted approx. 5 min

NY Steak or Beef filet with Chef Josef’s BBQ Seasoning Blend

For 2 People

Ingredients:

16 to 20 Oz. of steak or filet

3 tbs. Olive oil

1 tsp. Worcestershire  

½ tsp. chef Josef’s BBQ seasoning Blend

 

Instructions:

Combine all meat and ingredients, marinate for a minimum of 30 min.

Sear in hot cast iron skillet or BBQ  

The secret of cooking beef restaurant style (with a dark crust on the out side) is the serving dishes need to be really hot.

If you like to cook your meat more, after searing, turn heat to medium and finish cooking it until dark brown on both sides.
